Company Introduction
Ostradamus SA is a company that produces oysters in Portugal: triploid C. gigas, as well as European flat oyster O.edulis. We produce high quality oysters, with meat content up to 30%. Our product is quite different from the mainstream as they aregrown inside a 50 hectare earthen pond; our own private ocean.Besides having a very site specific taste and high levels ofglycogen for that sweet aftertaste, our oysters have a delicateshell. The delicate shell is due to the fact that they are immersed 95% ofthe time, only coming up for air in the final stages in order tostrengthen the adductor muscle. This means that, on average, ouroysters are 20g lighter than a tide reared equivalent oyster.
